Senor Toro Albalá is a fanatic about wine in general, and top-quality sweet wine in particular. The estate has been in operation since 1844 but Senor Toro's arrival in 1992 he greatly improved and modenized the bodega.
The wine is made of selected lots of Pedro Ximenez which are lightly fortified and freshened up with some Amontillado before ageing for 28 years in old US oak butts. Vintages are selected for release only when they have attained classical character. It's complex, sweet and dense with an Amaro-like bitterness. The palate gives lovely flavors of walnuts, spiced rye, dried fruit, orange peel, flowers, dates, coffee, licorice and chocolate. Try with dark chocolate or pour over ice cream.
