Rice: Gohyakumangoku

Tentaka Shuzo was founded in 1914 and brews their Sakes with water drawn from an underground stream that originates in the Yamizo and Nasu mountain ranges which goes through triple filtration to remove any unwanted natural debris.  "If it isn't dry, it isn't sake." These words of founder Motoichi Ozaki set the course for the style of sake Tentaka would achieve, and it remains so even today. This sake is labeled Tokubetsu, which means "special".

The Tokubetsu "Hawk in the Heavens" is a well rounded, dry, and crisp sake with a rich mouthfeel. The flavors are dominated by mixed nuts, flowers, fresh cut green grass and other earthier flavors with a pleasant and light sourness that gives it some body. The finish is lengthy and dry. It pair perfectly with bbq.
