Grape: Cabernet Sauvignon
Tasting Notes: Black cherry, Cassis, Spice, Cocoa
Justin and Deborah Baldwin planted 72 acres in vineyards in 1981. Initially they sold their grapes to other wineries but in 1987, they harvested their first grapes bottled under the Justin label.
The 2019 Justin Cabernet Sauvignon is a beautifully classic Cabernet; well structured, smooth, nearly full bodied with zippy acidity and velvety tannins. The palate is dry, with cocoa, cassis, plum, blackcurrant, black and red cherries with vanilla, cedar, sweet tobacco, and licorice accents and just the right amount of spice. The finish is long and clean with lingering bright cherry and spice nuances. Try with a Philly cheese steak sandwich.
