Rice: Gohyakumangoku and Gin-Ohmi
Tasting Notes: Raspberry, Asian pear, Watermelon rind, White flowers
Brewed in Kyoto by the Kizakura Shuzo Brewery (founded in 1925), Bushido is a premium Ginjo Genshu saké, polished to 60%. Bushido is the ancient Japanese warrior code of moral values, loyalty and honor until death. Usually unuttered and unwritten, the code allows the violent existence of the samurai to be tempered by wisdom and serenity. The palate is clean crispy, dry and refreshing with flavors of tart raspbery, Asian pear, and watermelon. Due to the uncut nature of Genshu sake the texture is bold and the finish is long and spicy. Try with shrimp, BBQ skewers, and mixed charcuterie.
