Mercat Cava aims to evoke the spirit of community, liveliness, and tradition. The producer is El Xamfrá, which was founded in 1987. Their critically acclaimed Cava is made using traditional methods by Francisco Dominguez who hand crafts every bottle with the utmost attention and care.
This sparkler is dry as a bone, medium-bodied and well balanced with crisp acidity. It moves through the mouth in cool waves of flavors of papaya, pear, green apple, and citrus rounded out with hints of hazelnuts. A great bubbly for a picnic, or a chicken burrito. One of our favorites.
Mercat Cava is vinified in the traditional (Champagne) method and aged for 18 months (twice the minimum for the DO). Vines are about 15-40 years old, planted on calcerous and clay soils. Dosage: less than 8gr/l
Region: With sixty thousand hectares of prime land under vine, and over two hundred bodegas and wineries operating there, the Spanish region of Catalunya is a vitally important centre for Spanish wine production and viticulture. It seems this has been the case for several thousand years, and recent archaeological findings have proven that Catalunya has a wine history which pre-dates Roman Spain by a considerable margin, making it one of the oldest wine regions in the world.
