Jim Clendenen, the “Mind Behind” Au Bon Climat, is recognized worldwide for his classically styled wines. Au Bon Climat (which means “a well exposed vineyard”) sources fruit from several of the most highly regarded vineyards in the Central Coast. The name Hildegard is a salute to the history of Burgundy and to Hildegard’s husband, the King of the Franks, Charlemagne.
The combination of this unique blend with long term barrel aging (2 years) made something special. It has texture, complexity, elegance and distinctiveness. The well balanced, medium bodied palate presents flavors of Anjou pear, peach, lime zest, some hints of ginger and minerality along with a touch of vanilla and butter at the very end. The finish is dry and lingers nicely. Pairs well with roast chicken or pan seared(in butter) scallops.
