It goes without saying that Todd Hardie’s decades of beekeeping expertise play into the crafting of these magnificent gins from Caledonia Spirits. Tomcat is a corn based spirit, which is distilled a second time with local juniper and honey sourced from Todd’s own bees, and aged for three months in American Oak casks. The result is an utterly unique, distinctly American gin with honey and dusty caramel notes rounding a classic juniper and menthol palate.
