Tasting Notes: Blackberry, Plum, Iron, Iodine
Chateau de Saint Cosme is the leading estate of Gigondas and produces the appellation’s benchmark wines. Wine has been produced on the site of Saint Cosme since Roman times. They were one of the first in the region to work organically beginning in the 1970s and to biodynamics in 2010. Saint Cosme Saint-Joseph is produced from 100% Sérine, an ancient and local variety of Syrah that is markedly different from modern selections.
A step up, the 2017 Saint Joseph offers another level of class and purity. A medium to full bodied but graceful Saint Joseph that has subtle oak, a seamless texture, and fine tannins.
Beautiful blackberry, black raspberries, cured meats, dark plum, wet stone, iron, coal smoke, iodine, and pepper notes glide along the palate, infused with hints of cast iron, bay leaf and tobacco. Seared venison or beef with black pepper and thyme are complimented by the spicy characteristic of Syrah.
