Founded in 1980, by Giambattista Cilia, Giusto Occhipinti, and Cirino Strano, COS (an acronym formed from their surname initials) is considered one of the benchmark producers of the Vittoria appellation in Sicily. Farmed organically and biodynamically since the 1980s, their vines in the deep south of Sicily thrive in the hot, dry climate.
Cerasuolo di Vittoria is an appellation around the town of Vittoria. It was elevated to DOCG status in 2005, making it the only DOCG in Sicily. This red blend is full bodied, balanced,and complex with smooth tannins, and medium plus acidity. There's flavors cherry, raspberry, earth, oak, tobacco, vanilla, and mushroom with a strong mineral backbone. Enjoy with pasta with lamb ragu or roast pork tenderloin stuffed with garlic, fresh herbs and raisins.
