Founded in 1980, by Giambattista Cilia, Giusto Occhipinti, and Cirino Strano, COS (an acronym formed from their surname initials) is considered one of the benchmark producers of the Vittoria appellation in Sicily. Farmed organically and biodynamically since the 1980s, their vines in the deep south of Sicily thrive in the hot, dry climate.
Nero di Lupo is an organic wine aged in concrete amphoras and is the richest of the COS reds, a powerful, mineral-driven wine. It's structured, light plus in body, crisp, savoury, and lightly tannic. The silky palate features plum, cherry, red currant, raspberry, dried herbs, spice, licorice, earth, iminerals and nuances of iron. It's a fine match cured meats and pasta dishes.
