Domaine Villalin is a small producer in Quincy, and one of the shining stars of this small appellation. The husband and wife team of Maryline and Jean-Jacques Smith organically farm and hand-harvest their 7.5 hectares in the heart of the Villalin lieu-dit. They ferment the wines with indigenous yeasts in temperature-controlled tanks, creating the most natural wines possible that express the typicity of their Quincy soils.
This bottling of Quincy hails from the original sector of the appellation. It's vibrant, full-bodied and quite elegant with excellent focus and grip, zesty acids and a long, complex and classy finish. The palate is Loire Valley - lime, lemon, minerals, crushed stone, green apple, fig, white peach, and gooseberries. Pairs with oysters, fish and even pork.
