Tasting Notes: Mineral, Apple, Citrus, Pear
With four generations of experience, Domaine Jolly is known for producing traditional, mineral-driven Chablis wines. Denis Jolly now farms 17.5 hectares all using sustainable agriculture.
The Jolly Chablis is fermented in stainless steel which yields a crisp and clean wine with bright acid, medium (-) body, and lean texture. The wine is aged on its lees for seven to eight months to give some roundness to the mouthfeel. Flavors of fresh pear, apple, lime, elderflower, yeast, and minerals lead into a saline tinged finish. Excellent with poultry, grilled seafood, or vegetarian dishes.
