Benoît Lesuffleur is mainly a wine broker in Paris but has a passion for making cider. Against his parents' initial wishes, he has begun making cider from their best orchard in Normandy and is earning top ratings.
This is a Norman-style cider, with lovely acidity, tannin, and complexity, and just a touch of residual sugar for balance. It's fermented with indigenous yeasts in the “méthode ancestrale”, and ages for 10 months on fine lees in the bottle. It's slightly off-dry with a beautiful sublime apple kick. It's packaged in a Champagne style bottle which makes sense since it drinks more like a wine than a cider.
