The Furusawa Distillery was incorporated in 1892. In 1942 Motoko became the master distiller and the first woman to run a Miyazaki Prefecture shochu distillery. Her granddaughter is now in training to take over one day. In 1974 Furusawa had stopped producing all other products other than handmade shochu from local agricultural products.

 This premium handmade shochu used white rice koji for the first fermentation. Kogane sengan sweet potatoes were added to the second fermentation.  It was then distilled just once (honkaku) in an atmospheric pot still which brings out richer aromas and allows for optimal aging. It was aged for more than 16 years, spending some time in ceramic pots and some time in enamel tanks. There are savory and comforting flavors on the complex palate including spices, caraway, a touch of smoke and, of course, sweet potato.
