A carefully curated selection of apples (Kermerrien, Marie Ménard, Douce Moên, Peau de Chien, and Douce Coëtligné) are hand-picked and aged in special crates for up to three weeks, so the fruit will slightly dehydrate, and its aromas concentrate. The result is a sweetness that delicately lifts the flavor profile up, avoiding any possible harsh undertones, and achieving a balanced crispness with the firm tannic structure. Notes of maple, orange, raisin and honey. An excellent pairing for a gamier selection of meats and traditional American vegetable dishes.
