Champagne Louis Roederer's "Cristal" was created in 1876 for Tsar Alexander II as the first "Prestige Cuvee" from the best grapes from the best sites in the best vintages. A blend of 55% Pinot Noir and 45% Chardonnay, it spends an average of five years sur lie, and is notable for its richness.
The 2012 vintage of Cristal is the first to be produced entirely from Demeter-certified, biodynamically-farmed fruit entirely from Roederer-owned vineyards. It's rich, full-bodied, complex, and structured with a silky, mouth-coating texture and racy acidity. On the lush palate there's flavors of chalky minerality, pear, apple, fresh lemon, white flowers, quince, Mandarin orange, and toasted almond. Fine creamy mousse and a great finish. Outstanding on it's own or pair with everything from burgers and fries to caviar and creme fraiche on blinis.
