The name of the estate is the first indication of its long, illustrious past. Located in the heart of Provence, near routes traveled by Crusaders in the early Middle Ages, Peyrassol was founded by the Knights of Templar who were dedicated to protecting the Crusaders. Peyrassol is rigorously maintained pursuant to organic principles. No synthetic fertilizers or pesticides or fungicides are used in the vineyards. Sheep manure is the only fertilizer used after the planting.
Delicately balanced, dry with lovely acidity and a soft finish. On the palate there's flavors of fresh strawberry, pink grapefruit, raspberry, peach, melon, crushed stones, lemon, cherry, and lavender. Matches well with charcuterie and other cold meats, olives, soft cheese, or just drink on its own.
