Saxum Vineyards was founded by Justin Smith and his wife Heather in 2002. Today, Saxum Vineyards is the most highly acclaimed winery in Paso Robles. They focus on producing Grenache, Syrah, and Mourvedre based blends from the Willow Creek District of Paso Robles. They respect the land and farm everything sustainably without chemical fertilizers, herbicides, or pesticides.
The Heart Stone Vineyard is a small 7 acre vineyard planted on a gentle South slope of limestone and shale. It's a full-bodied, mouth-filling, powerful yet elegant wine with silky tannins, superb depth and energy. The velvety palate offers red fruits, blackberry, black currant, licorice, earth, and Moroccan spices with some smoked herb and graphite nuances that expand effortlessly into a very long, lifted finish. Pair with something equally intense and/or spicy such as herb roasted rack of lamb or smoked beef ribs.
