Grape: 90% Listán Blanco, 10% Albillo Criollo,
Tasting Notes: Citrus, Pineapple, Mineral, Smoke
Tajinaste is run by the indefatigable Agustín García Farrais. They own three hectares in the Valle de la Orotava, and their oldest vines were planted in 1914. Having trained in Bordeaux, Agustín is a precise winemaker.
The Tajinaste Blanco is clean, balanced and intriguing with medium-body and medium to high acidity. The fresh and smooth palate conveys flavors of lemon, pineapple, apple, mineral, smoke, and floral notes. There's a long, round, minerally finish. So good with salt crusted fish or spaghetti alle vongole.
