In 1805, when François Clicquot, the founder's son, dies, his widow is 27. It takes Madame Cliquot only a few weeks to come to a decision. She thus becomes one of the first businesswomen of modern times. Madame Cliquot continued to build the business, introducing the vintage bottling and inventing the the first riddling table, which guarantees a crystal-clear wine. Ultimately, Madame Clicquot becomes known to her peers as “La Grande Dame” of Champagne.
As with all Veuve Clicquot blends, Demi-Sec has a preponderance of Pinot Noir which gives the champagne its fundamental structure. The inclusion of 30-45% reserve wines ensures the consistency of the Veuve Clicquot style. Finally, a dosage of 45 g/L gives Demi-Sec a sweeter balance of flavors. The Demi-Sec is medium bodied and crisp with very fine bubbles. The delicate palate features flavors of apple, peach, caramel, pears, honeysuckle, vanilla, mineral, grapefruit and brioche. Pairs well with many sweet desserts.
