Vilmart & Cie. traces its history back to 1890, when it was founded by Désiré Vilmart, and from the beginning, Vilmart & Cie. has always been making champagne exclusively from estate-owned vines. Since 1989 the estate has been in the hands of Laurent Champs, the fifth generation of the family to take the helm of the house.
A classy Champagne, that is crisp, exquisitely layered, full-bodied and frothy, with a good core, lovely mineral drive, fine focus and grip and a lovely, viscous creaminess. The expressive palate features flavors of lemon, grapefruit, pear, toast, green apple, and almonds with a touch of chalkiness and gingerbread. The finish is long and clean. Of course it should be enjoyed with caviar but also a good accompaniment with crab and butter soaked lobster.
