Stefan Wellanschitz is the unconventional thinker behind the Weingut Kolfok winery, taking a 19th-century estate and throwing tradition to the wind. In 2013 Stefan launched his own wines with a philosophy of natural winemaking utilizing organic farming with biodynamic practices.
Intra! The Wild is fermented "intercellularly", meaning fermentation begins in the intact grapes. The intact grapes rest in a large fermentation vessel where native yeasts slowly start the fermentation process inside of the berries, leading to a gentler extraction of the skins. The result is a terrific clear, skin contact (orange?) wine. There is some funk on the nose. It's bone dry, unfined and unfiltered therefore a little cloudy but the palate is smooth and luscious. Flavors of apple, grapefruit, yeast, melon, and white flowers that lead into a smooth mineral funk finish. Will go with roasted white meats or hearty fish.
